A VEG Thai Recipe refers to a Thai dish that is entirely plant-based, excluding meat, seafood, or animal-based ingredients. Ingredients:

- 1 tablespoon sugar (or coconut sugar)
- 1 tablespoon lime juice (adjust to taste)
Instructions:
Make the Green Curry Paste:
- In a blender or mortar and pestle, combine all the curry paste ingredients (green chilies, lemongrass, kaffir lime leaves, garlic, ginger, onion, cilantro, soy sauce, and lime juice).
- Blend until smooth, adding a little water if necessary to help blend the paste.
- Prepare the Curry:
- Heat the vegetable oil in a large pot or wok over medium heat.
- Sauté the green curry paste for two to three minutes, or until it becomes fragrant.
- Add the Coconut Milk and Broth:
- Pour in the coconut milk and vegetable broth (or water) and stir to combine.

- Add Vegetables and Tofu:
- Add your mixed vegetables and tofu cubes to the curry.
