Kashmiri Pink Tea, also known as Noon Chai or Gulabi Chai, is a traditional drink from the beautiful valleys of Kashmir. The secret lies in the slow brewing process and the addition of a pinch of baking soda, which brings out its unique rosy shade.

Ingredients You’ll Need:

  • 4 cups water

  • 2 tablespoons of Kashmiri green tea leaves (you can use ordinary green tea instead)

  • 1 pinch baking soda (about ⅛ tsp)

  • 3 green cardamoms (slightly crushed)

  • 1 small cinnamon stick (optional)

  • 2 cups full cream milk

  • 2–3 tsp sugar (adjust to taste)

  • Crushed pistachios & almonds for garnish

Step-by-Step Method:

  1. Boil the Tea Base
    In a deep pan, add water, green tea leaves, cardamom, and cinnamon. Let it simmer on medium heat for 10–15 minutes until reduced to half.

  2. Add Baking Soda
    Sprinkle a pinch of baking soda and whisk gently. You’ll notice the tea turning a reddish-brown color this is the magic step that later transforms into pink.

  3. Whisk for Color & Aroma
    Continue to boil and stir for ten minutes. As you brew longer, the flavor becomes more complex.

  4. Add Milk & Sugar
